Ingredients:
– 2 cups cooked rice (cooled)– 2 medium tomatoes, chopped
– 1 medium onion, finely chopped
– 2 green chilies, slit
– 1 tsp mustard seeds
– 1/2 tsp cumin seeds
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala (optional)
– Salt to taste
– 10–12 curry leaves
– 2 tbsp oil
– Fresh coriander for garnish
Instructions:
1. Heat oil in a pan. Add mustard and cumin seeds.
2. Once they splutter, add green chilies, curry leaves, and onions. Sauté until onions are translucent.
3. Add chopped tomatoes, turmeric, salt, chili powder. Cook until tomatoes are soft and pulpy.
4. Add garam masala if using.
5. Mix in the cooled rice and stir gently to avoid breaking grains.
6. Garnish with coriander and serve hot or at room temperature. Great for lunchboxes too!
