Ingredients:
– 1 cup black sticky rice (Chak-Hao or Kavuni Arisi)– 1.5 cups water
– 1/2 cup jaggery or sugar (adjust to taste)
– 1/4 cup thick coconut milk
– 1/4 tsp cardamom powder
– 1 tbsp cashews or raisins (optional)
– 1 tsp ghee (if using nuts)
Instructions:
1. Rinse black rice 2–3 times and soak overnight (very important to reduce cook time).
2. Add soaked rice and water to a heavy-bottomed pan. Cook on low-medium heat for 30–40 minutes, stirring occasionally, until soft and sticky.
3. Once the rice is fully cooked, add jaggery and stir until dissolved.
4. Add thick coconut milk and simmer for 5 more minutes.
5. Sprinkle cardamom powder and stir gently.
6. Optional: Fry cashews and raisins in ghee and mix into the rice for added flavor.
7. Serve warm or chilled. The rich purple-black color and nutty texture make this a striking, healthy dessert.
