Pulihora (Tamarind Rice) [Origin: Andhra Pradesh / Tamil Nadu, India]

 Ingredients:

– 2 cups cooked rice (cooled)
– 2 tbsp tamarind paste
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 tsp chana dal
– 1 tsp urad dal
– 2 dried red chilies
– 8–10 curry leaves
– 1/4 tsp turmeric powder
– 2 tbsp peanuts
– Salt to taste
– 2 tbsp oil

Instructions:
1. Heat oil in a pan, add mustard seeds. Let them splutter.
2. Add chana dal, urad dal, peanuts, cumin, and fry until golden.
3. Add red chilies, curry leaves, turmeric powder.
4. Stir in tamarind paste with 2 tbsp water. Let it cook until thickened and raw smell goes (3–5 mins).
5. Add salt to taste.
6. Add cooled rice to the pan and gently mix until rice is well coated with the tamarind mixture.
7. Let it sit for 30 minutes before serving for best flavor.
