Poita Bhat (Fermented Rice) [ Origin: Assam ]

 Ingredients:

– 1 cup cooked rice (preferably from previous day)
– 1–1.5 cups water (for soaking)
– 1–2 green chilies (chopped)
– 1 small onion (chopped)
– 1 tsp mustard oil
– Salt to taste
– Optional: mashed potato, pickles, roasted dry chili

Instructions:
1. In the evening, soak leftover rice in water in a covered bowl. Let it ferment overnight at room temperature.
2. The next morning, mash lightly and mix with chopped onion, green chilies, mustard oil, and salt.
3. Serve with sides like mashed potato, pickles, or roasted dried chilies.
